The main research areas of JS have been:
Bacteriological and epidemiological aspects of Salmonella infection and survival of zoonotic pathogens in the environment; The intestinal microbial colonisation process, including test methodology for assessment of genetically modified microorganisms; Farm-to-fork surveillance, and microbiological risk assessment based on stochastic modelling.
At the international level JS has participated in scientific evaluations and management activities in a number of international bodies: OECD, WHO and FAO Expert Consultations in microbiology and gene technology, EU Scientific Committee Veterinary Public Health and , Codex alimentarius Commission, WHO responsible Secretary (1999-2010), EFSA Advisory Forum, Danish representative (2010-14)
In recent years JS has participated in national and international optimisation of the present Food Safety systems, focused on the integration of the data pool from the food and production side with the human data available, i.e. with a Farm-to Fork or One Health perspective. The use of Risk analysis principles, including the use of scientifically based risk assessment as the basis for management decisions, has been promoted. This work has been supplemented with work promoting linkages and transfer of knowledge and experience between national authorities.
At the international level, more specifically JS has participated in strengthening the following areas:
- Creating the internationally agreed formats for scientific risk assessment of microorganisms (WHO) and genetically modified organisms (OECD, WHO)
- Focusing the WHO/FAO Codex Alimentarius Commission more on health issues, including One Health issues and developing countries issues.
- Building INFOSAN (International Food Safety Authorities Network), w. potential for international action in food safety emergency cases.
- Initiating the first ever estimation of the global burden of foodborne diseases, WHO Adv. Gr. of Int. Surveillance of Antimicrobial Resistance (AGISAR)
- Building Laboratory capacity relative to foodborne pathogens through the Global Foodborne Infections Network (GFN), more than 150 Member States
- Participating in the conceptual development of the One Health paradigm, with a specific focus on promoting Nordic experiences in the zoonosis area
- Presenting Danish data and experience in relation to prevention of antimicrobial resistance as related to antimicrobial use in agriculture
- Promoting global initiatives to utilize next generation DNA sequencing for microbiological characterization and epidemiological surveillance relative to human and animal health and food safety – the Global Microbial Identifier (GMI)
Research Interests
1) Chemical Food Safety
Specific research efforts relative to the Melamine contamination event in China 2008 included gathering, investigating and communicating data from approx.100 countries through the WHO INFOSAN network. Specific research efforts relative to Acrylamide initiated in 2002 with Swedish researchers first discovery of Acrylamide in food, later research efforts in this area include statistical analysis of epidemiological inestigations of cancer cohorts relative to acrylamide exposure.

2) Antimicrobial Resistance
Specific efforts in the description of cross-sectoral international science-based policy relative to the issue of antimicrobial resistance from non-human use. Definition of Critically Important Antimicrobials, a new concept focusing preventive efforts on the most important antimicrobials for humans. Tri-partite (WHO, FAO, OIE) scientific assessment of the risk and policy intervention landscape relative to Antimicrobial Resistance from non-human use.

3) Microbiological Food Safety (primarily with One Health focus)
Creation and initiation of the WHO/FAO Joint Expert Meetings on Microbiological Risk Assessment (JEMRA) including the development of 16 international microbiological risk assessments. Overview of international microbiological risk assessment efforts, with a baseline of specific risk assessments performed in Denmark 1990-1999. International risk assessments of Listeria monocytogenes in food. Initiation of a novel international initiative to develop and use Next Generation Sequencing in Microbiology, proposing a global machine to identify and track all microorganisms: GMI - the Global Microbial Identifier

4) Foodborne Diseases
Participation in international definition of guidelines related to communicable diseases, foodborne disease outbreak investigation and foodborne disease surveillance. Initiation and development of the WHO Foodborne Disease Initiative and the WHO Foodborne Disease Epidemiology Reference Group (FERG). Participating in the development of the 20th Communicable Diseases Manual.

5) Biotechnology
Participation in international definition of guidelines for risk assessment and management of Foods derived from biotechnology, with a base-line of specific risk assessments performed in Denmark 1988-1999.

6) One Health
Participation in international definition and promotion of the One Health concept in a collaboration between WHO, FAO, OIE, WB and UNICEF (in 2008). Description of Food Safety as an integral part of the One Health paradigm.
